Banana Pancake 香蕉松饼

星期天的早晨能为心爱的家人做早餐感到特别幸福。♡

用了两根吃剩的熟透香蕉,压烂后加入两颗蛋搅拌均匀,加入适量面粉,一小撮发粉,再挤点枫糖浆,拌成一个有点浓稠的面糊,然后用不沾锅煎一煎就完成了。加入香蕉的松饼特别好吃,孩子很喜欢,早餐吃得特别多。

Christmas Strawberry Shortcake

Merry Christmas to all my dear friends and readers! ♡

Here's my bake for Christmas, no log cake this year, just a simple strawberry shortcake.

Cake recipe refer to Carol.

Ingredients:
2 eggs
60g sugar
1/2 tsp lemon juice (or 1/8 tsp cream of tartar)
80g cake flour
1/2 tsp vanilla extract }
1 tsp vegetable oil } not in original recipe
Some icing sugar

200ml dairy cream
20g sugar
Some strawberries

Syrup mixture:
Dissolve 12g of sugar in 20g hot water. Add 1 tsp rum when it has cool down.

Method:
To make the cake, refer to the video here.
170C for about 12-13 mins.

Whip dairy cream and sugar to soft peak. You can chill the whisk and mixing bowl in freezer before hand and place the mixing bowl on ice while whipping.

To assemble, brush syrup mixture on one side or both sides of the cake as you like, sandwich with whipping cream and cut strawberries, decorate as desired.

Do not replace dairy whipping cream with non-dairy in this cake as dairy cream will make the cake taste much better.

Churros 西班牙肉桂油条

This small batch of Churros was done in less than half an hour but they were wiped out even faster by three monsters in the house. This explains how popular they are.....crispy outside and soft inside, indeed very tasty.

Churros

Ingredients:
(A)
1 cup water
1 tbsp sugar
2 tbsp vegetables oil
Pinch of salt
(B)
1 cup (140g) plain flour
1/4 tsp baking powder

Coating:
Cinnamon powder
Sugar

Method:
1) Mix (A) in a pot and cook till boiling. Remove from heat.
2) Add (B), mix to form a dough.
3) Set aside to cool down a bit. Meanwhile, mix cinnamon powder and sugar in a plate.
4) Place cooked dough in a piping bag which fitted with a big star tip. Heat oil, pipe dough into hot oil and fry till golden brown.
5) Coat with cinnamon sugar while it is still hot.

Note:
1) I somehow had difficulty in piping the dough so I shaped it instead and used the back of the knife to cut some lines.

Marshmallow Toast 棉花糖土司

早上做了这个给孩子当早餐,孩子觉得很新奇,看着开心,吃得也开心。

做法非常简单,土司涂牛油,放上棉花糖,160度烤几分钟到棉花糖变色即可。

Marshmallow Toast
Spead butter on toast, arrange marshmallow on top. Bake at 160C for a few mins till marshmallow turn brown.

Home-cooked Curry and Roti Jala



好久没更新了,大家好吗?最近除了忙工作也去了两次小旅行,冲完电回来又是努力奋斗的时候。

已经好久没正式为食物拍照了,虽然还是常煮简单的晚餐,至于烘培嘛,我的烤炉已经冬眠很久了。




在存档里找到些旧照片,两年前的旧作,很适合今天阴凉的天气,就请大家吃咖哩鸡和roti jala吧!



虽然已经隔了差不多两年,但我还记得当时做roti jala的情景,还挺好玩的,开始时做不好,做了几个后基本上能掌握窍门了。咖哩鸡是用妈妈自制的chili paste煮的,熟悉的味道最棒了。




希望能够继续经营这个部落格,虽然不知道下次更新会是时候,till then 大家一起加油吧!

Veggie & Seafood Pancake 蔬菜海鲜煎饼



一点高丽菜丝,一点红萝卜丝,一点青葱,一点鲜虾(去壳后抓点盐静置一下再洗一次,这样虾肉会比较弹口),一点蟹柳丝,两颗蛋打散,加入调味料(少许酱油,盐,鸡粉,胡椒粉,糖和mirin),100克面粉和一汤匙粘米粉混合均匀。这时面糊会非常浓稠,慢慢加入水调节成一个浓稠但不难搅动的面糊(我大概加入了1/4杯或再多一点的水)。


平底锅烧热点油,加入面糊,用汤匙背抹平,中火把两面煎熟即可。


我用Happycall煎,这个面糊刚好煎一片。


端给小儿当早餐,小儿问这是什么,我说这是pizza。平时不爱吃菜的他把煎饼吃光,没有把菜挑出来。家里有不爱吃菜的小朋友可以试试看。

粒粒汤



我家小孩很爱喝的汤,我本身也爱喝。

早上把照片中的材料(鸡肉先川烫过),番茄除外,全部加入焖烧锅,加两杯半到三杯的水煮滚,然后放入外锅。晚餐吃饭前加入番茄煮滚(今天我还加了点蟹柳丝),最后加少许调味料就行了。是不是很简单?


如果时间允许的话中午时份把内锅取出再煮滚一次,这样会更入味。


如果没有焖烧锅的话用slow cooker或者直接用煤气煮到材料变软入味。

【翻生 翻生 咸鱼都会翻生】咸鱼包 Ham Yu Pau


一部“食为奴” 让咸鱼包大红,早前到香港游玩一直在留意它的踪影无奈还是没有让我找到。因为太想试试它的味道,所以只好自己动手做。


面皮我用的是烫面面团,食谱参考连爱卿老师的《三杯面粉》。

普通面粉300克加一茶匙盐和10克油混合,加入90毫升滚水用筷子拌一下,随即加入100毫升冷水揉匀至光滑不粘手,松弛20分钟。然后,轻搓成圆长条,分割成12等份,收口成圆。


肉馅只是个大概。带肥肉的猪绞肉300-350克加入调味料(酱油,麻油,花雕酒,胡椒粉,少许鲍鱼酱,盐和糖,因为考虑到要加咸鱼,调味料的咸度要减低)拌匀顺时针打出胶,慢慢分次加入大约4汤匙的水或高汤拌匀(这个动作称为打水,可使肉质嫩滑多汁),盖上保鲜膜冷藏一小时。

咸鱼15克,切小块用少许油煎到金黄色,放入塑胶袋内打碎。

腌好的绞肉加入青葱,姜末和咸鱼碎拌匀,大略分成12等份。面皮杆成圆形包入馅料,收口捏紧朝下,略为压扁。

平底锅抹上少许油加熱,放入咸鱼包盖上锅盖(我用happycall),小火煎至两面微焦,肉馅全熟,趁热享用。我们沾黑醋吃,赞哦!

Baked Butter Ji Dan Gao 烤牛油鸡蛋糕


又烤了鸡蛋糕,这回用了溶化牛油,味道好香,另还加了半茶匙香草精和一茶匙rum。

家里糖粉不够所以用了白糖和一茶匙玉米粉(糖粉里是有玉米粉的),感觉没差,甚至更满意这次做的口感。

蛋糕表面难看的花纹是用蛋黄挤的,挤花袋剪太大洞,很难控制所以只好胡乱挤。

记录一下,这回用11”四方模,底部和周围都有抹油垫纸,烤时底部放两个烤盘,170度10分钟,150度15分钟。

Baked Ji Dan Gao 烤鸡蛋糕


最近在FB里很火红的烤鸡蛋糕,看到食谱时马上就想起几年前红极一时的清水蛋糕,配方雷同只是这个食谱的糖和粉量多了30%,幼糖换成了糖粉,还有添加了膨胀剂。家里没有自发粉,我只用了普通面粉,没有加发粉,加了一小撮盐,因为有打发蛋白,加发粉应该只是买个保险。

蛋糕很绵密,甜度刚刚好,面糊稳定容易操作,难怪大家做了都叫好。

6个蛋白+130克糖粉 (打发到硬)
6个蛋黄+2个全蛋+100克油+130克自发粉+香草精 (混合均匀)
一般戚风做法。

这里做个记录,9”四方盘,150度35分钟,蛋糕底下垫两个烤盘(避免下火太热)。

这是今天中午才做的牛油蛋糕,用了分蛋法,蛋糕特别细致柔软,留到明天吃刚刚好。

2014 German Cookies 德国酥饼


每年过年German cookies就会热起来,讲到易做好吃的饼干第一个让我想起的就是这款曲奇。



沿用一样的食谱 (http://angelcookbakelove.blogspot.sg/2011/01/melt-in-mouth-butter-cookies-aka-german.html),今年加了10g(一大匙)奶粉,味道几乎更好,喜欢!以后做都加奶粉好了,下次试试减少面粉量看看效果如何。

Crispy Baked Cod Fish Strips (By Air Fryer & Oven) 香烤鳕鱼丝 (气炸锅和烤箱)


去年跟风赶在新年前烤了紫菜鳕鱼片,家人很喜欢,今年买不到片状的(很像比较不普遍)于是只好买条状的,连紫菜也省略。

这里做一个记录,四条鳕鱼丝对折后用一条鳕鱼丝打一个结绑好,打结的动作要轻不然很容易拉断。当然断的都进了我的肚子。Air fryer 120C 6 mins,oven 140C 7 mins, 焖 1 min。
