Awfully Strawberry 粉嫩粉嫩草莓布丁。。。我以为我是少女


Korea strawberry is in the season and it is getting cheaper here. I cannot resist getting a few punnets each time I see them on sales. I can easily finish a punnet by myself at one go.

Today I am presenting this simple dessert aka Awfully Strawberry Pudding that made of all strawberry goodness. I combined my favourite Korea strawberry with my favourite strawberry yogurt and milk which are both from the brand “Meiji”.

To make the pudding is very easy, just blend everything together and add gelatin solution. I don’t even bother to cook the sugar with water. I just add sugar bit by bit (to taste) while blending the rest of the ingredients. This works as well.

Awfully Strawberry Pudding

250g fresh strawberries (I used Korea one)
2 tubs (280g) Meiji strawberry yogurt
1 cup Meiji strawberry milk
2 – 3 tbsp whipping cream (need not whip)
4 – 5 tbsp sugar to taste (or more, depending on the sweetness of the strawberries)
2 tbsp gelatin powder
6 tbsp water
Extra fresh strawberries to be served with the pudding

1) Measure water into a bowl and sprinkle in the gelatin (without stirring). Set aside to allow the gelatin grains to swell (10 mins) before setting the bowl over a pot of simmering hot water. Stir with a spoon and once the gelatin melts, remove the bowl from the pot and set aside to cool to room temperature.
2) Cut strawberries into small chunks and blend with the rest of the ingredients till smooth. Add the gelatin solution, mix well.
3) Now the mixture will have a lot bubbles on the surface. Pour the mixture in cups/moulds over the back of a spoon (one hand holding the mixer jug while the other hand holding a spoon, facing down), this way you will get smooth mixture without bubbles. Cover with cling wrap and leave to chill in the fridge till the pudding is set. Serve immediately once remove from fridge.

1) Whipping cream is optional, you may omit it but it gives the pudding a creamer texture.
2) Feel free to use other brand of strawberry milk and yogurt if you can’t find Meiji brand.

  8. Looks so yummy. Great recipe as the ingredients are not too difficult to find.
    May I ask, will there be a difference between dissolving gelatin powder in cooking and waiting for it to swell then double boil. Why must we wait for gelatin to swell? Won't the gelatin mixture harden while waiting for it to cool to room temperature? (sorry, so many questions)
    I can't wait to do it now. :)
    Maybe find mango milk and substitue strawberry with mango to make mango pudding :)

    Sherlyn, let gelatin swell in room temp water can avoid clumping. Do not bring gelatin mixtures to a full boil or you risk losing its thickening properties. It doesn't take too long for the gelatin mixture to cool down to room temp because double-boiling method is used. The mixture is not hot either. Thus, need not worry it will turn hard. Even if it has turned hard, you can always reheat and it will become liquid form again.

    You can substitite strawberry with other fruits but be careful with fresh pineppale, raw figs, kiwi, guava, ginger root and papaya. These fruits contain an enzyme called bromelain which breaks down gelatin causing it to lose its thickening properties. The enzymes are deactivated by cooking, so canned pineapple and kiwi are fine to use.

  11. Hehe, I cannot wait .. so without your tips I still went ahead to made it two days ago.

    I stir after i put in the gelatin powder cos i did not sprinkle so they form lumps when they touch water, so i quickly stir to separate them.

    Thank you for your tips on what fruits to use, but i think i will not be so adventurous. Anyway my fussy kids only like strawberry and mango.

    Yes, I did see the mango pudding recipe, but the pink strawberry one is just too tempting . :)

    However, I notice that my pudding kind of liquify. Not sure if it shd be the case .. but my pudding did set, then after the kids done with it, I notice those remaining in the ramkins are a little watery. So I guess gelatin kind of melts? like jelly put in room temp after awhile?

    Thanks for giving this recipe a try.

    Yes, the pudding will become soggy if leave in room temp. for too long time but it won't become watry. I travelled with the pudding for more than one hour in a hot day and they still stay in shape.

  16. Hi octopusmum,

    U can use evaporated milk but I think the taste will be different, probably more milky and evaporated milk is unsweetened so u need to add more sugar. Try Meiji strawberry milk u won't be regretted.

  17. Tks for the reply. I am looking for a recipe to use up the left over evaporated milk and I have wanted to make this so am wondering if I can just substitute ....

    Sure, just go ahead. Just a suggestion maybe u can add a little strawberry paste to enhance the taste (if u have it).

    Another good recipe to use up ur evaporated milk that I can think of is the steamed moist chocolate cake. U can find the recipe in my blog.

    i don't have strawberry paste but it is okay , i have found another recipe to use up the milk. i am going to make this pudding another time using all the ingredients you have listed... as for the steamed moist chocolate cake, i have made that a few times before. wonderful recipe which rekindled my love for baking.... but can't make that now cause my kids are having slight cough, avoiding chocolate stuff at the moment as exams are coming !!
