Peanut Butter Muffin 花生酱满分


家里刚刚开了一罐花生酱,所以就找来孟老师的的这个食谱试试看。买回来的食谱书很惭愧真正试做的大概平均只有书里5%的食谱,但是我有食谱当书读的习惯,同一本书我可以看很多次,每次翻读都有新的发现。所以,我大概都可以记得每本书里有些什么食谱。

有谁和我有同样的怪习惯?


这是一个非常简单满分,只需拌一拌就能进烤箱。

也许是因为我个人不是很喜欢吃花生酱(比较喜欢酸酸的果酱)所以我觉得味道有点腻,还好我用了小纸杯,小小一杯配上浓茶或是咖啡乌倒还好。有几个我加了Nutella在上面,我觉得比较好吃。

满分的口感是属于比较扎实那种,我的吃法是吃前放入微波炉叮一下(记得旁边放杯热水),然后趁热吃。


This is an easy mix and bake muffin recipe with peanut aroma. So if you are a peanut butter lover, you may like this.

Peanut Butter Muffin

Ingredients: (yield about 5 standard size or 10 mini size muffins)
(A)
2 eggs
60g castor sugar (I used 55g)
(B)
50g vegetable oil
(C)
100g crunchy peanut butter
60g milk
(D)
100g cake flour (low protein flour)
1 tsp baking powder

Method:
1) Beat (A) with a hand whisk till well combined. Add (B), mix well.
2) Add (C), mix till smooth.
3) Sift in (D), fold in with a rubber spatula till just incorporated.
4) Scoop into muffin cups till about 80% full.
5) Bake in preheated oven at 185C for about 25-30 mins (depending on your cup size).

Note:
I added Nutella on top of some muffins before baking and I actually preferred those with Nutella. The original one tasted a bit bland to me.

  1. Angel, you aren't alone. Cookbook is also book! I've been reading 5 different cookbooks lately just b4 I go to bed. When winter comes, this is one of my habits, haha! Love the feeling of turning on the heater in my room, tuck my legs under my quilt & then study some cookbooks after my girl has gone to sleep.

    I love peanut butter very much & I think I like this muffin!

    Hahaha, I thought I am the weird one.

    I literally "read" every word of the recipe and if the recipe is in bilingual, I read both languages. haha!

  6. Angel, thanks for sharing this recipe. As I still some remaining Nutella spread, I will use it in this recipe too.
    I also have a huge collection of cookbooks but still cannot stop buying ... :DD

    me too , most of the time just did few recipes from a cookbook and then moved on. But true, i enjoy looking thru cookbooks all the time. But i dont hv this book that you use here. I can imagine how aromatic these muffins are!

    也做得最多咯。。

    i recently purchased this cook book and another from the same author (popular has 30% discount for members and i couldn't resist!). the 2 books r now on my bedside table and i have been reading them every night...so u r not alone:)

  11. I just bought another cookbook when I attended the cooking demo by Chef Fabio, a finalist in America's Top Chef. There are so many cookbooks that I have not even try a single recipe. I look through them now and then though, hehe. When I see peanut butter in this recipe, I know I am gonna love your muffins.

    So now when I want to try something new I will try to adapt the recipe from my recipe books colection first, at least try one recipe from each book.

    I think I am not alone, hehe.

    I quite like this book. This book classfy recipes based on four seasons and all the recipes are quite easy, home style type. If you can read Chinese, you may want to take a lot of this book when you visit bookstore next time.

    Ya, we buy cookbook not only for the recipes, I like the feel of holding the book (else recipes are all over in the Internet) and to get new ideas, sometimes I sumply love to look at the food photos.
