一滴不剩 ~ 新式葡国鱼 Braised Stingray in Special Curry Tomato Sauce


魔鬼鱼在我家有几个固定的料理方式。妈妈最常用大量豆鼓,芹菜,姜丝和辣椒一起炒,要不就是炒咸菜。再不然清蒸,偶尔也会拿来煮assam。

妈妈做的魔鬼鱼料理都非常好吃,但爱尝鲜的我还是希望能够有更多的变化。在Yum Yum杂志上看到这个类似澳门葡国鸡的煮法时觉得一定合我的口味,所以一买到新鲜的魔鬼鱼就尝试煮了。这道菜的佐料包括番茄,灯笼椒,马铃薯和洋葱。马铃薯配搭鸡肉很平常,但是和鱼配搭对我来说挺新鲜的(后来我才突然想起曾经煮过罐头tuna鱼焖马铃薯,是超好吃的)。


这道菜看起来红彤彤的但是却一点也不辣,即使我多加了食谱以外的辣椒。本来有点担心家人不喜欢这个煮法。但是看到整锅鱼被一扫而光,连一滴酱汁也不剩我就知道答案了,特别是爸爸,赞不绝口。而我个人觉得整锅最好吃的是那焖到入味的马铃薯,连我自己都感到意外。


This way of cooking stingray is new to my family. We finished the whole pot of fish in no time, including the last drop of gravy.
Braised Stingray in Special Curry Tomato Sauce

   Ingredients: (for 3-4 pax)
   2 tbsp cooking oil
   1 tbsp chopped garlic
   1 onion (cut into pieces)
   1 potato (cut into pieces)
   600g stingray (cut into pieces)
   1 green capsicum (cut into pieces)
   2 bird's eye chilis (optional, not in original recipe)

   Seasonings:
   5 tbsp tomato sauce
   1 tsp salt *
   1 tsp sugar*
   1 tbsp curry powder
   500ml water
   *This amount of salt is too much for me. Suggest tasting during cooking time and added seasonings gradually. I also added some light soy sauce.

   Method:
  1. Heat up oil, sauté chopped garlic and onion till aromatic. Add chili (if using) and potato, stir fry till well-mixed.
  2. Add seasonings and bring to a boil. Lower the heat and simmer for about 10 mins.
  3. Add fish and simmer for about 15 mins.
  4. Lastly add tomato and capsicum and bring to boil. Dish up and serve.
   Note:  
   Cooking time is for reference only.

  
   新式葡国鱼

   材料:(3-4人份)
   油 2汤匙
   蒜蓉 1汤匙
   洋葱 1粒(切块)
   马铃薯 1粒(切块)
   魔鬼鱼 600克(切块)
   番茄 2粒(切块)
   青灯笼椒 1粒(切块)
   小辣椒 2条(随意,不在原食谱内)

   调味料:
   番茄酱 5汤匙
   盐 1茶匙*
   糖 1茶匙*
   咖哩粉 1汤匙
   水 500毫升
   *这个份量的盐对我来说有点“死咸”,建议边煮边试味道,可以酌量加。另外,我也加了点酱油调味。

   做法:
  1. 烧热油爆香蒜蓉和洋葱,加入小辣椒(如使用)和马铃薯炒匀。
  2. 加调味料煮滚,转小火煮约10分钟。
  3. 加入鱼继续焖煮约15分钟。
  4. 最后加入番茄和灯笼椒煮滚,即可上桌。
   注:
   烹煮时间仅作参考,实际烹煮时间请自己拿捏。

      因为加了咖哩粉的原故,其实番茄酱的味道不是很重。我觉得挺不错吃。
