Make Cake with Mayonnaise 美奈兹做蛋糕

我很喜欢尝试新东西,至少在烘培这一方面。

当我在网络上看到美奈兹做蛋糕这个主意是时觉得很有趣,美奈兹里有鸡蛋和油,刚好可以代替蛋糕里少不了的这两样材料。

碰巧家里的冰箱有一罐七月过期的美奈兹,所以我对这蛋糕的兴致更浓厚了。即使回到家时已是晚上十点半而且第二天还要上班,我还是义无反顾的进行我的计划!
蛋糕的做法很简单,就像做muffin一样,干的料混一起(除了糖外),湿的料混一起,然后搅拌在一起就行了。

蛋糕糊是异常的浓稠,我很少碰过这么浓稠的蛋糕糊。

看得出很浓稠吗?

蛋糕有很浓的可可味(至少对我来说)(我不是很会吃那种很浓的巧克蛋糕,所以我是不吃brownie的),组织非常松软(有点像在吃海绵蛋糕),放到隔天更好吃,第三天吃时还是一样松软。

缺点是有点粘牙。很奇怪,我未曾吃过会粘牙的蛋糕,我想是我用的美奈兹里的成份造成的吧!

后记:我在电脑打出‘美奈兹’时其实心里一直暗笑,你不觉得它听起来像。。。没奶子。。吗?哇哈哈!

Mayonnaise Chocolate Cake 美奈兹巧克力蛋糕

This is a cake made with mayonnaise in place of eggs and oil, something I never try before.

Ingredients:
(A)
2 cups flour
½ cup cocoa powder
1-½ tsp baking soda
¼ tsp salt
(B)
1 cup sugar (I cut down to ¾ cup)
¾ cup mayonnaise
1 cup water
1 tsp vanilla essence

Method:
1) Mix (A) till well blended.
2) Mix (B) till well blended (mixture should be smooth) (I use an egg beater to do the job).
3) Sift (A) into (B) in a few additions, mix well before each addition.
4) Pour batter into a greased and lined cake pan. Bake in preheat oven at 180°C for about 20 - 25 minutes or till cooked (insert a skewer and it comes out clean).
5) Remove from cake pan and transfer to wire rack for cooling.

    你真厉害! 其实Mayonnaise和其他材料B混合后是液状的。粘牙的程度可以接受,不过我应该不会再做因为很肥!哇哈哈!
