Lucius 三岁生日蛋糕 Part 2: Chocolate Cupcake with DIY Cupcake Topper

今年宝贝的生日落在星期一,我拿了假准备带他到学校和老师同学们一起庆祝生日。本来想星期天一整天可以好好准备他的生日蛋糕和送给小朋友的礼物,谁知突然间需要当陪游,出门一整天到晚上11点才到家。当时已经是累到。。。但没办法还是得硬着头皮做蛋糕。还好我原本也只是想做简单的杯子蛋糕。

选了周老师的巧克力杯子蛋糕食谱。周老师用全蛋打发法但是多加一颗蛋黄,比例是两颗全蛋,一颗蛋黄。多加蛋黄有助于全蛋的打发,面糊也比较稳定。


蛋糕进烤炉后我就开始包礼物。今年我买了便当盒子当送个同学们的goodies bag。特地跑了一趟Daiso,想要买现成的纸袋来包装,美观又省事。但万万想不到所有合适的纸袋都sold out(我还是特地跑去最大那间),只剩下Hello Kitty的,总不能儿子的生日用Hello Kitty吧。所以,最后我只好凌晨12点多才开始用礼物纸一个一个包,十多个便当,我用了将近两个小时才包好,是我手脚太慢吗?入睡时已经是半夜两点钟了。

第二天一睡醒(有点overslept)开始打发鲜奶油,我加入了Nutella到打发好的鲜奶油里。其实我认为Nutella只能加入buttercream,不适合加入fresh cream,可是我的手却不听我的脑,结果当然是出事了。鲜奶油软趴趴的,根本无法挤花。幸好家里还有材料,再打发过,这次我加入了可可粉。用最快的速度挤花,因为我还没做cupcake topper呢。那些不能用的鲜奶油当然没被我丢掉,放入冷冻库冰冻后就成为雪糕了。


自知没有什么美术天份,我在Popular买了一张全是交通工具的帖纸(宝贝喜欢所有交通工具,特别是车子),把帖纸剪开黏在吸管上就是cupcake topper了。

所有一切准备好已经是出门的时间了,真的非常非常赶。

把蛋糕带到学校,我尝试用蛋糕排出"3"的形状但是同学们七手八脚的开始“抢”蛋糕,场面一度陷入混乱,还好及时被老师镇压下来。我们匆匆忙忙唱了生日歌就把蛋糕分了,同学们已经迫不及待要吃蛋糕了。唱生日歌时Lucius全程紧握着一个蛋糕,深怕被同学抢完似的。

他也是超爱这款杯子蛋糕,应该说是超爱上面的cream。他说是ice cream,吃完“ice cream”后不吃蛋糕又想拿第二个,当然被我阻止了。

This batch of chocolate cupcakes was for my son 3-year-old’s birthday celebration in childcare centre. The cupcakes were decorated with whipping cream and DIY toppers which made of sticker and straw. The cake base was chocolate sponge cake, extra egg yolk was used in the recipe which made the beaten eggs more stable and hence easier to succeed.


Chocolate Cupcake with DIY Cupcake Topper

   Ingredients:
   2 eggs
   1 egg yolk
   60g sugar
   1/6 tsp salt
   36g milk
   50g cake flour (sited)
   10g cocoa powder (sifted)

   Method:
  1. Mix eggs, sugar and salt in a mixing bowl. Beat over warm water till egg mixture    become warm (I skip this step).
  2. Remove mixing bowl from warm water. Beat egg mixture at high speed till ribbon stage.
  3. Add milk and flour/cocoa mixture, roughly mix with a hand whisk (I just detach the beater from my mixer and use it as hand whisk).
  4. Change to a rubber spatula, and fold in till just incorporated.
  5. Scope batter into paper cup till about 80% full. Bake in preheated oven at 180C, middle rack, for about 15 mins.

   Kitchen Note:
  1. I made 3 times of the recipe, yielded 31 cupcakes.
  2. I baked in two batches. I noticed some cupcakes from the second batch have a layer of “kuih like” texture at the bottom. I believe the batter has deflated due to long waiting time. I shall add some baking powder if I can’t bake all the cupcakes at one shot.
  3. The cupcakes did not shrink after cooling.
  4. The topping is whipping cream mixed with cocoa powder. Piped by Wilton#1M.


巧克力杯子蛋糕
  
   材料:
   2个 全蛋
   1个 蛋黄
   60克 细砂糖
   1/6 茶匙 盐
   36克 牛奶
   50克 低粉 (过筛)
   10克 可可粉(过筛)

   做法:
  1. 把全蛋,蛋黄,糖,盐打散,隔水加热至微温(我省略了这个步骤)。
  2. 离开水浴,用高速打至浓稠发白,提起打蛋器蛋糊不会马上滴下.
  3. 把牛奶加入,再倒入低粉及可可粉,用手动打蛋器大致混匀。
  4. 改用橡皮刀拌匀,不要过度搅拌。
  5. 舀入纸杯至8分满,放入预热烤箱,以180度,中层,烤约15分钟。
  
   厨房笔记:
  1. 我做食谱的三倍份量,大概做了31杯。
  2. 我的烤箱一次只能烤20几杯,所以我分两次烤,第二盘其中有些沉底,应该是等太久消泡了,提醒自己下次如果要分两次烤必须加点发粉。
  3. 蛋糕出炉冷却后并没有回缩。
  4. 表面的挤花是加入可可粉的fresh cream, Wilton#1M花嘴。

      我觉得小男生的蛋糕很难弄,如果是小女生就好,很多又sweet又可爱的东西可以做,而且感觉简单的多。

      Yes there is no butter or oil used in the cupcake but the cupcakes don't taste dry.
