这是我们昨天的brunch,有没有被诱惑到?
以前还没有孩子时我和D偶尔会炸鸡来吃,再开罐罐头浓汤就是一餐了(回顾这篇)。有了孩子后这还是我第一次炸鸡呢!
最近超想大口大口吃炸鸡翅膀的,其实上星期四吃过,但却吃到非常难吃的,让我想自己炸鸡翅膀的欲望升温。只能说昨天那餐很满足!
要炸的鸡翅膀清洗后要抹得非常干,我喜欢用简单的调味料来腌,通常只用盐和胡椒粉,有时也会加点咖哩粉,这次我加了点paprika。
我尝试了由月儿女士分享的炸鸡法,成品效仿KxC的炸鸡外皮,但我觉得我的没有很像。做法是把腌好的鸡翅膀沾上面粉(一次油锅里要炸几个就沾几个),放在篮子里冲水(把面粉冲掉),冲好水马上再沾面粉(我有加点咖哩粉在面粉里让炸好的色泽比较美),然后直接放入热油里炸。
除了炸鸡翅膀我也准备了简单的马铃薯泥,下面会分享我的做法。另外,照片中看到的黑色浓汤是从蘑菇园买的冷冻蘑菇汤,一包SGD6。煮出来就是照片中一碗的份量,足够两个人喝。我有加一点水因为觉得有点咸,但是味道是很不错的,吃起来能够咬到蘑菇颗粒,不像罐头浓汤。
This is my simplified version of mashed potatoes. I like to add garlic into the mashed potatoes. You won’t really taste the garlic in the mashed potatoes, it just makes the mashed potatoes tastier. The ratio is one potato to one clove of garlic. I would suggest not increasing the salt in the water proportionate to the number of potato used just in case the mashed potatoes become too salty. You can always add more salt later on.

Ingredients:
(A)
1 potato, peeled and cut into big chunks
1 clove garlic, peeled
½ tsp salt
Enough water to cover the potato
(B)
Butter
Black pepper (or any spice you like)
Method:
1) Cook (A) till potato becomes soft (can easily poked through by a fork). Drain and keep about 1 – 2 tbsp of water, mash potato and garlic while they are still hot.
2) Add (B) to taste. Add additional salt if you find the mashed potato is not salty enough. Add more water from cooking the potato if you find it too dry (I didn’t use milk because I didn’t like it too milky).
Note:
The potato I used this time is from Indonesia. Use Russet potato from USA for best result.

材料:
(A)
马铃薯 1粒(去皮,切块)
蒜头 1瓣 (去皮)
盐 ½ 茶匙
足够盖过马铃薯的水
(B)
牛油
黑胡椒(或是其他喜欢的香料)
做法:
1) 把(A)料加入锅里一起煮至马铃薯变软(叉子能轻易穿过)。把水倒掉,只 留1-2汤匙,趁热压烂马铃薯和蒜头。
2) 加入适量(B)。如果觉得不够咸可以再加入盐。如果觉得太干就加入多点煮马铃薯的水(我没有用奶因为不喜欢奶味太重)。
补充:
1)我在这里用的是来自印尼的马铃薯。做薯泥最好选用美国的Russet potato。
2)如增加马铃薯的份量,建议水里的盐不要跟着比例加,因为担心会太咸,待马铃薯泥做好后再加入适量的盐也不迟。

I was curious about the fried chicken method too, since you said is not that taste similar to KXX fried chicken, then i will drop this idea..I like fried chickens especially enjoy with nasi lemak, hehehe..

DeleteDon't get me wrong.
I meant look wise, I didn't do a good job because this method is suppose to imitate the crispy skin of KXX fried chicken but mine don't really look alike lah. The skin is still crispy though and not oily at all.
Taste wise I think it depends on the marinate you use.
